A family tradition
We’ve been making this Blackberry Dijon Ham for over 10 years and I finally snapped a few quick photos before we served it.
The glaze is so simple: blackberry preserves, Dijon mustard and apple juice. But man is it tasty! Sweet, tangy and caramelizes as it bakes.
You can make the glaze by whisking everything together in a small mixing bowl, however, that tends to leave little chunks of preserves floating around, and it’s not always the “prettiest” to look at once the ham is glazed. I find using a mini food processor for about 30 seconds makes it nice and smooth.
This recipe was scaled down for a smaller ham (since we’re just a small family), but can be easily doubled if you’re serving a crowd. This delicious ham is sure to be the star of your next get together or Christmas party!
How to make it
It’s so simple!
GLAZE. In a mini food processor combine the blackberry preserves, Dijon mustard and apple juice. Pulse until smooth, about 30 seconds to 1 minute.
ROAST. Place ham in a roasting pan with about 1/2-inch of water in the bottom. Glaze with a pastry brush and place in the oven to bake at 275 for 15 minutes per pound, glazing every 20 minutes. This allows it to build up a nice crust.
Tips + Storing Info
Using a spiral cut ham is recommended. If you use a regular ham make sure to trim the fat and the rind first and then with a sharp knife score the outside of the ham in a diamond pattern. This will allow the glaze to adhere to the ham more easily.
This glaze would also be a great compliment to baked or grilled chicken or pork.
Variations:
- Seedless raspberry jam can be substituted for the blackberry jam.
- Add some dried chili flakes into your glaze for a little extra spice.
STORE leftovers in a Ziploc bag or airtight container for up to 4 days in the fridge. Leftover ham shouldn’t be left out at room temperature for more than 2 hours.
FREEZE in a Ziploc bag or a freezer safe airtight container for 1-2 months.
What to do with Leftovers?
- Leftover ham is tasty whether it’s served warm or cold.
- It’s a perfect addition to your breakfast or you can use it to make a delicious sandwich.
- If your leftovers have been frozen it is best to thaw them in the fridge first for 4-6 hours per pound. Warm leftovers up in the oven covered tightly with aluminum foil and bake at 325 degrees for 10 minutes per pound.
